Ao Nang highly recommended. A bit older but very chill. More things to do, less expensive. Can go to Railay Beach for a day by long tail boat.
The 7 island tour is wonderful, I would definitely book that. I was do the tiger temple and emerald pool tour on your own and do them both on separate days. I was so happy to not be on a crowded tour bus seeing those places. I rented a car and arrived at the mineral pools before the tour busses and was able to enjoy them alone with only a few people. When the tour busses arrived at 10 it was a madhouse. Them the tiger temple is still 45 min drive and there’s no way I would have wanted to climb all those steps in the afternoon. Take a taxi and get there at sunrise on another day. I was back to my condo by 10 so you have the rest of the day for other activities.

Stay in town or down the river at eden eco village. Or both. I'd suggest the latter for relaxing and scenic stay.
Take a day trip to the recently renovated Kep Beach (45min from Kampot)
Day trip #2 - go up bokor mountain and explore the 4 tiered waterfall and abandoned cement villas covered in graffiti. Nice views if it's clear. If not clear, the fog is surreal.
Siem reap tips: stay at babel guesthouse (great with kids) see the non-animal circus called Phare. Live music at Laundry Bar. Theams Gallery. Botanical garden. Phnom Krom sunset. 🙏
